They're still on a lot of physical media! (I've even currently been hired to work on a commentary track for the 1990 TMNT movie.) Though the best are from the more obscure B or Z-movies. Mainstream films neutered what the creators could say to the point where they weren't particularly interesting anymore. The best place to find behind-the-scenes stories now are podcasts over commentary tracks. Either an interview with the creators or the podcasters themselves will dig up the story like borderline investigative journalists.
